So simple and so delicious, this dish is so addictive, you can eat it all over again! This pasta called "alla Sorrentina" and takes its name from Sorrento, Napoli. The recipe uses just three simple ingredients: cherry (or vine) tomato sauce combined with fresh basil, smoked scamorza cheese and pasta. Here my recipe is with trofie pasta, a perfect size for this stringy cheese. As this dish contains few ingredients, make sure you invest on the quality of them. Organic olive oil, fresh basil and cherry tomatoes at peak season, for example, will give to your plate the perfect results!!
Serving 2 people
INGREDIENTS:
2 whole garlic cloves
10 vine tomatoes or 500g of cherry tomatoes (halved)
120g of smoked scamorza cheese, cubed
160g trofie
1 handful of basil leaves, torn
salt
pepper
Start to prepare a large pan of water heavily salted to cook your trofie pasta.
While waiting for the water to boil, prepare a pan with olive oil, on medium heat. Add the garlic and very gently cook until soft. Don’t allow the to garlic colour as this will give the sauce a bitter flavour. Remove the garlic and add the tomatoes. Slowly cook down for a few minutes until they start to fall apart. Season to taste with salt and pepper. Remove from the heat, add the cubes of scamorsa, torn basil leaves and keep warm away from the direct heat.
The water should have been boiling by now and your trofie almost ready, cook it al dente. Drain the pasta, reserving some water, and add the pasta to the pan with the sauce, along with some reserved pasta water. Turn and allow the cheese to melt into sauce. Serve when the the cheese has started melting and become a cream. Enjoy the experience!!!
