Not only pears and cheese are the best known pairing from the countryside tradition in autumn season, but here is another famous one that many of us are greedy for: pears and chocolate! The sweetness of pears, soft and juicy, is delightfully combined with the strong taste of dark chocolate. This delicious union has given life to many preparations such as this classic and mythical desserts: pear and chocolate cake
Serve 8/10 people
INGREDIENTS:
3 eggs (room temperature)
220g flour 00
16/18g "Lievito Pane Degli Angeli" Vanigliato
1 chopped pear
3 pears cut in sliced
70ml sunflower oil
140g sugar
Brown sugar
180g of 70% dark chocolate
40g unsweetened cocoa powder
180g of plain yogurt
Walnuts
Preheat the oven to 160°C / 320°F fan.
Prepare an easy release springform round cake tin (24cm diameter), butter it all around and sprinkled with flour.
Peel the 4 pears, cut 1 of them into very small cubes pieces, place it in a small bowl with a spoon of brown sugar, mix and keep in a side. Slice thin the other 3 (like in the first below image), place in a bowl, add 2 spoons of brown sugar and delicately, without breaking the pears slices, with your hand mix them to allow the sugar to melt around the slices. Keep on a side.
Place a heatproof bowl on top of the pan so that it fits snuggly, but doesn’t touch the water.
Lower the heat to remain at a very gentle simmer. Add the chocolate for 4-5 minutes, until the chocolate is melted.
Meantime, in a large bowl whisk the eggs with electric mixer at medium speed for around 10 minutes, add the sugar and whisk again for another 8/10 minutes. The mixture must be frothy and clear.
With the mixer on at low speed, continue to add your ingredients one by one - first the oil, then the yogurt, the sifted flour and cocoa powder in the end.
Once you well incorporate the flour and cocoa powder, add the baking powder until it is combined. Remove the electric mixer, add the melted chocolate and the small pieces of pear included their juice and combine using a spatula with movements from the bottom to the top.
Let start to decorate the cake. Pour half of the composed in the tin cake and make a flat layer with the help of a spatula. Take the pears slice and start to decorate, making a second layer with them. Pour the rest of the composed on the top, again a flat layer, and then decorate this last layers with pears slices. Sprinkle some walnuts.
Bake in the oven for around 40/45 minutes, or until a stick comes out moist and not to dry.
Sprinkle with honey and wait until the cake is cold to remove from the tin cake and cut the first slice!
