sformato di patate al forno - baked potatoes pie with mozzarella, ham, cherry tomatoes and basil

So light and so delicious, rustic "Sformato di Patate" is very easy to prepare, healthy and perfect for an everyday meal with your family and friends.

This is classic dish when you don't know what to prepare, when you don't have time in the kitchen or when you have an empty fridge!

There are a lot of different ingredients to be used together with the potatoes to make this pie and here the recipe is one from my friend in Italy who run a Pizzeria.

For this recipe, I have used some of the colourful and emblematic Italian ingredients: mozzarella, ham, cherry tomatoes and basil.

The potato and ham pie with stringy mozzarella is a tasty and light second course, a potato flan without béchamel but slowly cooked in the oven from the water of the melting mozzarella.

If you are vegetarian, no problem, remove the ham or replace with another ingredient like mushrooms or another cheese!


Serves 4 People

Oven tray used 20x25cm


  • 2 White medium potatoes

  • 4 mozzarella cheese

  • 10-12 small cherry tomatoes

  • 180g ham, thinly sliced

  • parmesan cheese, grated

  • fresh basil leaves

  • Salt

  • Pepper





Preheat the oven to 160C.


To prepare the potato and ham pie, peel the potatoes, wash and cut into thin slices. If you prefer, use a mandolin.


In a baking tray, lay the first layer of potatoes (you can add some salt here if you like), the sliced ham, cherry tomatoes (sliced in half if you like), basil leaves, a little Parmesan cheese and thinly sliced ​​mozzarella or crumbled with your hand, as I have done for my recipe.


Proceed with another layer. These ingredients should be enough for two layers.



Gently place a sheet of baking paper on the top and bake. The cherry tomatoes and the mozzarella will slowly release it is cooking liquids and will let to cook the potatoes by giving the nice flavours. Remove the paper after about 20 minutes and cook for another 10-20min ; with a fork check that the potatoes are cooked before removing the pie from the oven. Cooking times may vary depending on the thickness of the potatoes and different ovens temperature.

For the last few minutes, place the pie under the grill or at the top of the oven if you like more crispy the top. When serving, you can also add some black pepper on the top.

The potato and ham pie with mozzarella is a main course and you can serve it with a fresh salad!
