There are so many variations of Apple cakes. I love this recipe, which is my grandmother's, because the only protagonist is the apples. The cake uses a low amount of flour and is a beautiful, quick and easy cake recipe. It doesn't need much attention, yet will still impress your family, friends and loved ones!
INGREDIENTS:
7 medium Granny Smith Apples
3 Free range eggs
100g of sugar
1/2 organic lemon peel
1/2 Lemon juice
100ml plain yogurt
115 g plain flour
10 gr Paneangeli Pure Vanillina Sachets (Italian powder leaving agent with vanilla for making cakes)
1/2 tsp of cinnamon (to taste)
Preheat the oven to 180°C / 356°F fan.
In this my recipe I have kept the Apple skin, but this give a bitter taste. If you wish sweeter, peel and core the apples before cutting them into thin slices. Place the apple slices in a bowl, add the lemon juice and mix. Keep the bowl of coated apple slices to the side.
In a separate mixing bowl, add the eggs and the sugar and whisk with a steel hand whisk or electronic whisk. Add the lemon peel and whisk again. Add the yogurt, whisk again.
Add the flour with the yeast you have prepared and mixed both in previously in a small bowl. Whisk again and add the cinnamon. Poor the compound on the top of the recipient where the sliced apples are and mix well with a spoon.
Poor everything in easy release springform round cake, previously sprinkled with butter and flour.
Bake for 30/35 minutes, until golden brown and crispy apples. Sprinkle with powdered sugar.
Delicious served warm with ice cream or a big dollop of whipped scream on the side - or both.
