Mafaldine pasta with the simplicity of fresh tomatoes and basil sauce!
A classic mediterranean pasta dish, perfect for summer as well as winter and for your Mediterranean diet.
This authentic recipe is saucy, full of tomatoes and basil smell and flavour, light and healthy, like Nonna used to make!
Very simple and quickly to prepare with just a few simple ingredients and with your everyday kitchen tools!

For 2 people:
200g Mafaldine
500g fresh organic mature Cuore di Bue or San Marzano tomatoes
1 tablespoon extra virgin olive oil
Fresh basil leaves
Salt and pepper
Grated Parmigiano Reggiano
Boil a large pan of water and salt where you will be cooking your pasta.
In a non-stick pan, place the oil and the fresh skinless tomatoes pulp cut in small pieces at low heat until they start to realise their own water.
With a fork help to smash the tomatoes pulp. Add few basil leaves and continue cooking for around 10min or until the sauce get thicker.
Drain the pasta 1min before the cooking time, and add to the pan with the sauce and a couple of ladles of pasta water. On a high heat let the pasta cook for the last 1min together with the sauce, to take all the flavour.
Remove from the heat and after a minute or two add few more basil leaves and a couple of Parmigiana Reggiano tablespoons. Mix all together and serve on a plate with basils leaves on the top as a decoration.
Extra cheese and black pepper to your taste before start eating :)
