This combination, figs and Pecorino, is one of those classics that is always enjoyable.
The sweet taste of figs blends well with the distinct taste of pecorino cheese. It's very important for this recipe you choose Pecorino with a medium maturation. This is not only because it's better intense taste but also for best melting results. In this recipe, you will still taste the fresh figs with the warm and creamy melted pecorino and oh yes the crunchy walnuts and a note of sweetness with honey! What else? Nothing else than a beautiful glass of white wine, is preferred.
Serving 4 people
INGREDIENTS:
8 ripe figs
240g medium mature pecorino cheese, sliced
Walnuts
Honey for flavouring
Black pepper
Take any kind of flat plate and lay few leaves of salad or wild rocket. Peal the figs (figs are to be eaten without skin) with your hand or with a help of a knife if you prefere.
Place them on the top of the salad leaves and with a knife cut them by creating few open cloves.
On a small saucepan place the pecorino cheese with a tablespoon of water over low heat. Once the pecorino is melted pour it on the top of the figs.
TIPS - If you think that the melted Pecorino still to think add a bit of extra water into it. The melted Pecorino must be creamy. -
Sprinkle with a bit of black pepper, some small walnuts and honey before serving while the Pecorino still warm! Enjoy!!
