Farfalle pasta salad





Farfalle pasta salad is a fresh and quick dish for a warm summer day.

This cold pasta is perfect for a tasty and rich meal, but also healthy, suitable to take to the office for a fresh and regenerating lunch break or to be enjoyed at the beach under an umbrella, for an outdoor picnic with your friends or as a first course meal to start your barbecue with!

All in one plate, cold pasta can be made with different ingredients like for any salad: legumes, eggs , fish or meat. This is why we have a lots variations for an Italian cold summer pasta! Here I offer you a colourful, fresh, light and tasty one with mozzarella, artichokes, olives, cherry tomatoes and ham. The bitter taste of the rocket give an irresistible scent to cold pasta, adding an extra touch to your dish.

With cold pasta you will impress everyone and if you want a light but at the same time refreshing and delicious dish, this is the perfect recipe for you!


For 2 people:



  • 200g Farfalle pasta

  • 200g Ham (ask your shop to cut the Ham in 1cm thick slice)

  • 4 Artichokes hearts in oil

  • 1 Mozzarella Galbani

  • 2 Tablespoons black olives

  • 30g Rocket

  • 140g Cherry tomatoes

  • Extra virgin olive oil

  • Salt and black pepper










Boil a large pan of water and salt where you will be cooking your pasta.


Take a large bowl and start to prepare the ingredients; cut the cherry tomatoes in half, cut the artichokes in small slices, add the whole pitted olives or cut them in slices , thinly cut the rocket, cut the ham and the mozzarella into small cubes of 1cm.

When the pasta is al dente, drain it and transfer it in a bowl; season with a drizzle of olive oil and mix well to prevent it from becoming sticky; let it cool to room temperature.

Once the pasta is cold transfer to the other bowl with the ingredients previously prepared.

Season with extra olive oil, salt and black pepper to your taste. Please it in the fridge and serve it cold. Enjoy your summer day!!
