If you are a chicken lover and particularly a chicken legs lover like me, this lemon and herbs flour is something you must try now! So simple to make and with just a few ingredients. The lemon gives a delicious flavour and scent and keeps the meat soft and juicy. The herbs, on the other hand, will add a distinctive flavour to the meat, together with garlic.

This fresh and rustic oven-baked chicken with lemon and herbs is perfect for dinner or lunch with your family and friends, or just to treat yourself, I am sure everyone will love it! You can serve it with oven-cooked or fried potatoes, mixed salad or with bread for your "scarpetta" rituals :)


Serves 2.


INGREDIENTS:

  • 2 organic free-range chicken legs

  • 4-5 spoons extra olive oil

  • 4 organic small cloves garlic with skin

  • 4 springs rosemary

  • 4 bay leaves

  • Some thyme

  • Some sage leaves

  • 2 organic lemons

  • Salt

  • Black pepper, ground

  • Extra vergin olive oil



Heat the oven to 170° fan.

Pour the olive oil in the oven tray, add the chicken, the juice of one lemon, whole cloves garlic, rosemary, sage, salt and pepper. With your hand mix all the ingredients, making sure the chicken is covered well with all of them. Now, arrange the drumsticks in the tray for cooking. Cut the 2nd lemon into 4 slices and place them around the tray with the chicken. Sprinkle with extra olive oil, pepper and add the rosemary.

Cover the tray with the baking paper and bake. After 20-25mins, remove the tray from the oven. You should see some lovely gravy forming from the chicken and the lemon. Now we need to turn the chicken on the other side to cook both sides.

Continue to cook for another 20mins, and then remove the paper and let it cook for another 5mins to allow some of the gravy to dry and the chicken to turn a golden colour. Tip: the chicken needs to be cooked in both sides, crispy but not dry, and make sure you keep gravy. Serve as it is, rustic and very delicious!!
