"Agnello in padella con ginepro" - pan fry lamb with juniper berries




Lamb with Juniper Berries is very easy recipe with impressive results! The aroma of the berries, with the wine and the rosemary, make this a spectacular dish. If you love lamb and you never tried a different way either than oven or grilled, this is a recipe for you!

This is a recipe from my mum; I remember her cooking this amazing piece of organic lamb from our local farmer, with the berry harvest from the nearest mountain.

You can accompany it with roast potatoes and vegetables. Don't forget your favourite wine!


For 2 people:


Ingredients:


  • 300g Lamb mixed pieces (chops, chump steak, shanks); ask your butcher to chop in small pieces

  • 1 full tablespoon of Jupiter berries

  • 50ml white wine

  • 1 garlic clove

  • rosemary

  • salt

  • Extra virgin olive oil


n a pan, on medium heat, place a few tablespoons of oil and garlic and small rosemary sprig. When the garlic begins to fry, add the lamb. Fry for a few minute each sides, or until it gets a crispy brown on both sides. Add the wine and let it evaporate. Turn the heat down, very slow (do you mean turn the heat down slowly? or turn the heat down very low?). Add the juniper berries, salt and pepper and extra rosemary. Remove the garlic and cover with a lid. Let the lamb cook until the sauce dries. This should not take long, but it may vary depending on how small or big are your lamb pieces. Serve right away with some rosemary roast potatoes! Enjoy!
